The perfect pumpkin soup! Take one squash (bonbon variety pictured, superb taste), peel, chop into 1/2 inch cubes then roast for 30 mins (covered) with olive oil and salt. Mash up then transfer to a pan. Add parmesan (50g per half a squash, see picture for size reference), stir then add 1L of good quality chicken stock and simmer for 10 mins. Allow to cool slightly then blend to a super smooth liquid. Add double cream (how much?...you choose) and warm through. Tastes fantastic!
A goo alternative to BonBon would be Honey Bear Squash. Equally as tasty and maybe not so sweet. These will be the only squash for eating that will grace my patch next year.
