Biodynamics is the "word", of the year for "winespeak, but what on earth does it mean? Perhaps "what in the heavens"? is more to the point. Think holistic farming with a bit of astrological hocus-pocus sprinkled on top, like manure-filled cow's horns buried in self-sustaining vineyards. We kid you not! Based on the teachings of Austrian philosopher Rudolf Steiner, who first introduced the idea in 1924, biodynamic farming takes organic farming practices (no pesticides or chemical sprays) one step further, by farming according to cosmic and seasonal rhythms. And yes a cow's horn filled with cow manure should be buried in the ground during the winter and dug up in the spring, the manure then diluted and sprayed over the vines to stimulate growth. But the resulting wines are nothing to joke about, and the purity of biodynamic practices shows in these exceptional bottles. TOP PICKS: Domaine Pierre Morey 2004 Bourgognne Chardonnay, France ($26.00), Mas Estela 2000 Vinya Selva de Mar Red, Spain ($32.00)
