I wanna collect seeds from my onions and carrots and radishes, how do I get them to seed, and how should I go about collecting the seeds?????

For your onions let them flower (bolt) clip the umbels (flower head) as soon as majority of flowers have dried. Seeds will start dropping from some flowers at this time so check often. Allow to dry in cool, dry location for up to 2-3 weeks.
With the carrots hand pick each umbel as it dries brown. Large amounts of seed can be harvested by cutting entire flowering top as umbels begin to dry. Allow to mature in cool, dry location for an additional 2-3 weeks.
And the Radishes Harvest stalks containing seeds pods (bolted plants) when pods have dried brown. Pull entire plant and hang in cool, dry place if all pods are not dried at the end of the growing season. once dried open pods by hand for small amounts of seed.
To clean all seeds above, simply rub the flowers between your fingers or hands in the case of radish pods.

Yo Colonan, What Ernie missed out was that onions are a bienniel and will not flower the first year..only the second year..so you have to grow them for two seasons.
