Subject:  Freezing sweet corn (bodacious)?

Hello, First time grower of corn here and the crop is really good this year. How do you guys freeze your corn? With cob or without? Thanks

Both,You can boil water and put the ears in for about 1-2 min.and then vaccum pack them.works great! then when you want them boil till done.or cut off and I put butter and half and half in and cook it till done in the oven about an hour then freeze.Just make sure you stir every 15 min. or it burns on the side and bottom.350 degrees.

We have a hot pot of boiling water. A large colander type strainer. Remove the corn from the cob with a sharp knife. Dunk it for 1 minute to blanch it, bag it. At a little butter and enjoy all winter long. Next year go with a real sweet corn "Ambrosia" it doesn't get any better than that.

Thanks guys, Shannon I thought I read that Bodacious was they yellow counterpart to Ambrosia? I thought they had the same sweetness?

We have for years simply taken a few of outer husks off, chopped both ends a little, and stuck it in a freezer bag. We would then pull out as many as we needed, run them under warm water to peel off the hunks and silk, and then drop them in boiling water until done.

It might not be as tasty as the other recipes, but it's near summer quality, and it's really easy. I like both of those reasons.

We desilk, leave in the husk. Soak in a 5 gallon bucket for a day or so. Then on the bbq (charcoal of course) they go, once cooked they get vaccuum packed and frozen. When ready to eat, just boil in the bag. Nothing like opening a bag up in mid Feb, just like summer returned!

All the recipes iv looked up say to blanch properly you need to imeaditly after boiling put into cold water (iced) !,Thats the way iv been doing it, first boil water then add ears-boil again 3 minutes -cool then into cool sink water - then ice water-(makes ice water last longer, if your doing a lot) needs to stay in water longer than you might think to cool inside, Let it drain off water ,i let mine sit into clean towel -then scrape (cut) off curnels ( I cut the corn to have more space in freezer ,but have done bolth) then vac pack !

Vac pacing can be tricky when its cut corn, The water gets into seal & causes it not to seal , First drain & dry corn before cutting curnels, But still a lot of moisture gets squezed out by machine , Theres a couple thinks you can do ! when air is out of bag hit the seal button ,dont wait for it to do it automaticly, sometimes not enough though! So move up to seal half ince up , of imeadatly rehit seal button ,important to get water out of tray everytime of it wont work for lont time & youll be stuck with no packer for long while ! Good luck Not hard when you get tecqunic down !!!
