Subject: When to tell giant SF heads have matured?

Just wondered if anyone out there knows when a giant sun flower head reachs its full potential size? I have one that the bees seem finished with and the middle is fully filled in and not greenish. I am guessing this is finished, but was wondering if I was going to pick it too early. Thanks for any feedback. John
