Calcium high soils add sugars and good ol sunshine.Add calcium and molasses and get some great tasting veggies. Stressed plants will turn out more sugars and tomatos that have went without water for some days will taste better. Seems to work for me anyway.

I heard something similar about watermelons, that if you back off the water, that they taste sweeter.
