When the necks start to brown and the leaves start to wilt.

If you are growing hardneck variety, this is the time of year we remove the scapes, or the the reproductive part of the garlic that produces the seed head. Once the scape is removed close to the top leaf, the plant puts it energy to the bulb, so we achieve bigger bulbs. Every leaf represents a skin on the bulb of garlic with the top leaf of the plant being closest to the cloves, and the bottom leaf being the one on the outside of the bulb. As the bulb grows it naturally outgrows these protective skins, thus killing the leaves from the bottom up. When the plant has 5 green leaves counting from the top down, it is time to harvest. I dig up the plants and pull the sixth and sometimes the fifth leaf down the plant to leave a nice white bulb of garlic with at least 4 or 5 skins on. Good Luck

I have no idea what kind I have. A few segments (cloves) were left in the fridge and started to grow So I separated them and planted'em. They are from the super market.
