Subject: What is the best way to freeze bell peppers?

I cleaned out the garden tonight because the first frost is coming (kind of appropriate that the first frost comes day before weigh-off), I've got about 50 peppers and was trying to decide what to do with them. I've chopped them up in past years, but only because that's the way I see chopped pepper in the grocery store. Can anyone offer a suggestion?

The nice thing about freezing peppers is they don't need to be blanched. My wife just washes them and slices them in strips or rings. They work well in soups, chili, stir fry,omelets, etc., just take what you need out of the freezer and put the rest back!

we just clean out the seeds wash and put in half gallon bags this allows you to pull them outa freezer and use for stuffed peppers or sliced etc!

That's exactly what I do burrhead! Nothing like a good stuffed pepper in January!
