Does the pollinator have an impact on the size of the pumpkin being grown? I read somewhere that the pumpkin itself is the ovary and that its function is to protect the offspring (the seeds)while they grow to maturity. It said that the pollinator's genes were passed on to the next generation, but didn't really have any impact on the size/shape/color/etc. of the ovary/pumpkin. Is this correct?

You have it nailed dead on! Just be sure when you give one a name that it is female or they quit growing right then and there. Rule #2 Don't insult a lady.
