Jason,
Too much water is bad. It excludes soil oxygen which louses up the availability of nutrients. Yellow or not, the plants respond first with less growth & will eventually die as the roots succumb to rot.
Soil should be allowed to dry in the first half inch or so. A finger will determine moisture levels deeper than that. When low areas collect & hold water, berms & a tarp are sometimes all it takes to save the patient.

good rule of thumb is that if you pick up a hand full of soil at roots depth....it should 1 mold to to your palm and hold that form and not drip more then a drop...if you squeeze it and it wrings like a sponge you have no air in the soil....if yo can keep the soil this way you sould be okay....also check how fast your soil drains by pouring a gallon in one spot....if it sits there for two days you have no percolation and need to soften it up..drainage is as important as keeping it watered!
