when do the creases start its day 21 here & they are not well defined yet & yet my other plant seems to start getting them about 4 days after pollination but she isnt wanting to hold fruit on the main

Those creases are called ribs, dont worry they'll come soon enough.

Some plants are genetically disposed to different fruit characteristics. Long football shapes, "wheels", deep ribs, shallow, ribs, even barely any ribbing. But like Alun said, they usually do come.
