Everyone always seems to be comin down with something lately ......so here's some Garlic Soup I always haul out whenever I feel I need a boost! I make it in bulk (5 x recipe) and freeze it. Can be used as a base for casseroles etc. as well.
6 Heads of Garlic (Yes I said heads....not cloves..don't use elephant it doesn't work as well) 10 cups Chicken stock Mashed potatoes 1-1/2 cups cream fresh broccoli and 1/2 tbs of any kind of herbs you like...i like basil
peel heads of garlic and cook in stock for 1.5 hrs. Put through blender until garlic is a smooth paste. Put the stock and garlic back in the pot and add cream. Then add mashed potatoes until you get a consistency you like. Add fresh broccoli (corns good too) or any other veggie you like and cook it at a medium temp until the veggie is cooked and soup is hot. Serve with dusting of ground pepper.
Bon Appetite...and oh yeah....dont go around people who don't like smell of garlic for a couple of days..This will make you SWEAT!! he he....is sooooo good though!

cripes if you are going to smell of garlic throw some cabbage and kale in the soup..To provide a cover scent.

shannon with cabbage you might have another smell besides garlic to worry about lol, shouldnt matter though, people wont get near you stinking of garlic ;)

I'd try 8 large potatoes mashed Gary...but you will see if you like it thicker or not. Anyway's that's what I use. You can also substitute yams as well.
