Oh yes, you asked the right question.
We are having a ham for Christmas and this glaze is the business. Once you have boiled the ham remove it from pot and allow to cool slightly. Place 1 tablespoon of English mustard with 250g soft brown sugar in a bowl. Then add enough rum or whisky to make it into a thick, sludgy paste. Carefully cut the skin off the ham leaving a smooth, even layer of fat over the meat. Place the ham in a large roasting dish and then score the fat layer with the point of a knife in a coarse diamond pattern, but not so deeply as to go right through the fat to the meat. Slosh about 40ml of rum or whisky over the fat and then spread the glaze over it in an even layer. Stud the fat with about 20 cloves at regularly spaced intervals and roast ham at about 180 degrees celsius for 1 - 1 1/2 hours, until the glaze is a dark, golden-brown, bubbling crust. Serve with parsley sauce and spiced figs, pineapple or prunes. That is our Christmas Dinner!
