2 medium pie pumpkins (peeled, cut and diced, about 7 cups) 2 sticks cinnamon 15 cloves 2 1/3 cups 4% vinegar 2 1/3 cups sugar
1. Steam pumpkin till tender, about 10 min.,drain 2.Put spices in a cheesecloth bag or tea ball, simmer with vinegar and sugar for 15 min. 3. Simmer pumpkin cubes in this mix for 3 min. Set aside 24 hours 4. Reheat mix to simmer (5 min.)Remove spices and pack into sterile 1/2 pint jars.(leave 1/2 inch space) 5. Process in boiling water bath 5 min.
Makes 7- 1/2 pint jars

Ok Kilr... I hear ya on the beer, wine, etc....but I gotta draw the line on Pumpkin Pickles....yuck, that sounds disgusting !!!...........G

How about if we used a big fat Green squash instead G. Now they probably sound more appealing. Haven't you ever had pickled watermelon rinds. Almost the same recipe.

You know what we outta do? Since DebnRandy and Kilr, and a few others end up at Niagra in March/April, we should have a "pumpkin products promotion happy hour"....pumpkin leather, with a sampling of pumpkin pickles, some pumpkin cheese muffins, washed down with pumpkin homebrew and Pumpkinwine....bring a jar of something for a tasting, and all meet up Sat night at the post dinner BS session.....so we can taste test while Nic Welty tells us how he inadvertantly crossed his 705 Stelts with a squashbug and created the super squashbug.............G

hey G, good idea you noticed i've got a bit of a belly from deb's cooking and kilr seems to have some good recipes so we all could have a good ole pumpkin eating time i've had the pumpkin vine and it's pretty good the thing i look for is pumpkin beer we went out to deb's brotherr's place in mentor oh. and looked for crooked river brewery found a office building with crooked river brewing outside no brewery but found a bar that served crooked river beer but was out of season for pumpkin beer hey G if we see you up in niagra again and deb keeps cooking i might have to call you slim lmao!!!
