1st I would like a good recipe for Sweet Dumpling (winter squash). Does it need to age to improve taste? If so how long.
Second, I have two Fairytale pumpkins that I picked green on Oct. 19th. Due to the frost. They are still firm and changing to a medium brown color. Should I toss them in the compost pile or do you think they are edible? Do they need to age?
Third; I have a small Jarrahdale pumpkin. Does it need to age as well? I have heard that some pumpkins and squash taste better if aged for a while. Not sure if these are some of those. Thanks...............Tom

bantam, when the wife makes those sweet dumpling squash i cut them in 1/2 and scoop the seeds out then she adds 1-2 TBSP of butter ,some brown sugar or maple syrup again 1-2 TBSP and just a pinch of salt and pepper the 1-2 TBSP depends on size and personal taste then cook them until done 30-45 min again depending on size for lots of recipes check out www.pumpkinnook.com
