anyone got a good polish kilbasa recipe i can use ready to make sausage but want tom make 20 pounds of kilbasa too!! lol, thanks pizza

Peter- I have a great sausage & meat curing book that I've used to make many different sausages but haven't tried this particular kielbasa recipe For 25 lbs fresh kielbasa 2/3 cup salt 2-1/2 T Sugar 5 large cloves garlic 2-1/2 T marjoram 5 cups water 25 lbs boneless pork butts Grind through a 1/4 or 3/8" grinder plate and mix all ingredients in well. Stuff in 35-38mm casings and let age overnight in refrigerator for better flavor. There are also recipes for cured and smoked kielbasa, email me if interested! Auston
