Is it possible to save seed from a jack-o'-lantern if it was hand pollinated?

Yes, you can save seeds even if it's open pollinated.

Of course, if it's open, you may end up with an large, ugly crookneckumpkin.

Thanks for replying. I think I should've been a little more specific. I was wondering if its offspring would produce the same pumpkin.

Is a jack-o'-lantern a F1 hybrid? if it is then you will not get a jack-o'-lantern.

Of all the pumpkins I've ever carved & saved seeds, none that I am aware has ever failed to grow.
