Are there any advantages of cross polinating pumpkins from different "stock". For example, and Atlantic with a Holland's or is it better to simply use the pollen from 1 plant?

Using pollen from more than 1 plant will ruin the cross you are trying to make. Only use 1 plant as the pollinator and be sure to tie off the male and female flowers the day before and (for the female) after pollinating. This will ensure that your cross is genuine.
