what amendments can be used to build soil? i've heard of many things, but are there any special amendments being kept away from beginners? are there any odd ones that not all know about?

Jersey Greensand, vermiculite, perilite, azomite, calcined clay.

I'm also a big fan of perlite and vermiculite - makes the soil very light, and easy for roots to grow into. It all depends on what you have to start with, though. Like PumpkinLisa said, I'd get a soil test and work from there.
