Has anyone altered the chemistry of their water prior to brewing, Besides chlorine? Like Ph, or removing heavy metals, or buffering?

Wiz: Lots of hydroponic gardeners alter the water pH. Plenty of pH altering products out there on hydroponic web sites. But, you got to believe the pH is close to neutral for city water. If you can, use rain water.
