Tad12 - how does altitude factor into the DO2? ....say i live @ 5480ft. would any adjustments need to be made to your KIS (5) gallon brewer?
like the motor/pump size?
or the amount of food?
wouldn't temperature @ higher altitude factor into the end results as well? (higher temps - less oxygen in the air)
would sufficient oxygen dissolve into the tea using your KIS (5) gallon brewer "as is"? (using supplied motor/pump?)

A Longer brewing period may be needed, I brew mine 14-16 hours.....

I agree, you would want to brew a little longer. If you are using a food source other than the one provided, then you would also want to cut back on your foods. Which system do you have? The 12 hour or 24 hour system?

Then I would agree with the Wiz. Best solution would be to check the tea under a microscope or send off a test to the lab to make sure. I feel reasonably confident that you should be okay though.
