Right now I have 2 plants per hill(about 6-8 inches apart) spaced about 6-8 ft apart. Should I thin to 1 plant per hill or just leave them alone. The vines are about 1-2 ft long and healthy. Thanks.

Yes if you want big ones, just one per hill.

Pumpkins have a tendency to be controllable so that you could run two in the same hill in a christmas tree pattern, but watermelons are a different deal.

I recommend one per hill if you really want to grow a giant.

It would be very tight. I have vines that regularly grow 30+ feet long. You can trim them or wrap them back on themselves.
