Which is a better growing month with the following stats? Should I consider skipping May altogether for best CC weather?

May 75F High / 51F Low 14:22 day length, often cloudy/rainy with dips into the mid 40's.

October 79F High / 54F Low 11:28 day length, rarely cloudy more stable night time temps.

I'm going on the assumption you're talking about starting in June and running into October vs starting sooner. If that's the case I'd start about May 1 with heating cables in the ground and maybe a hoop structure if you have time to regulate day temps inside. I really like taking advantage of the longer days.
