I've never trimmed back any of my vines before, but I'm sure I should. So, I'm going to do it, now my question is how much? I've got 3 plants that are covering 600-700 sq. ft. each. I know they're out of control, and I need to trim them back, but don't want to overdo it either.

I usually just cut a straight line out from the stump along the side opposite the melon. I have taken out close to half the total vines at once. As long as you don't cut your melon off you will be fine. You may want to try to leave vines that are well rooted. I have never noticed decreased weight gains from this practice and they may indeed pick up a little. You are also less likely to have a trimmed vine go down on you IMHO.

I would trim them back to about 500 feet & then wait a week & take it down to 400.leaving all tap roots in place.After that just keep trimming the new vines off that are going to bury your rooted ones
