I threw a few long gourds in this year and really know nothing about them. How long does it take for the fruit to mature? Does the growth just suddenly end or does it taper down as it ages?
Can anyone help me?

Normally they grow for about 35-40 days. Lats year was my 1st year and the growth just tapered off.

Good growth rates are 4-5" a day, initially, and then that will taper off. If you leave them on much longer than the 35-40 days Sambo mentioned, they have a tendancy to develop splits. Culling to fewer fruits seems to improve the length of the keepers. Good luck!

Do I cut them off after they stop growing or do I leave them on the vine for a few days to make sure they're done growing?

I've got one stalled right now at 3 days with no measureable growth so it will get harvested tomorrow.

So...What is a good length for a long gourd?
I measured one last night that is 72". It's the longest I have ever grown, but how does that compare?
