Eddy,
I haven't taken any out of ours yet this year. Last year we opened them up right after our competition and they germed fine after a good drying. I just took a knife and split it in quarters and then just started digging. You will be amazed how sweet the flesh smells compared to how stinky the actual plant is. LOL We got over 100 solid seeds from our 91" last year. You will find like a pumpkin there will be immature seeds here as well. The largest most mature seeds seem to be on the bottom 1/10th of the gourd.

Eddy, Ditto what John said plus this...longer you wait the tougher the skin/rind gets and you'll consider exchanging the box cutter for a skill-saw to retrieve seeds...LOL!
All the keeper seeds at the bottom as John said.
Happy Harvest, Duff
