I'm going to try this for the first time. So far the only advise I have been given is to only add a teaspoon of salt per jar. Does anyone here add anything else to add to the taste?

We did this once. It was fun. I cheated by reading the side of a V8 bottle. Celery, Lemon, Onion, & Carrot juices. Salt & pepper for sure. Some folks add sugar too.

I salt to taste. Some years I use 1/4 tsp others I use 1/2 tsp.

remember unless you are drinking it fresh..adding things changes the acidity..which is important for the canning process...unless you like botulism..Salt is Ok other stuff may spell trouble.....

Celery seed is good in tomato juice..I use some citric acid also and one tsp salt per quart of juice.

I like to add a small amount of beets to my juice. Just enough to add some really great color, and some earthy taste. Just don't put in too much.

Try to find a Kerr or Ball canning book. Tells you how to can, freeze etc. Tomatoes are one of the easiest. Also contact your local AG. Extension Office and they can help you.I would help my mom and dad put up 5 to 60 quarts of tomatoes at a time. Now I get to do it by myself.
