I grow a dozen different varieties every year. Some of everything usually ends up as sauce. I do avoid using any of the green varieties for sauce, if you mix them in they make a funky brown color of sauce. If I was to pick a few I like best it would be Cherokee Purple, Jersey Devil, German Red Strawberry, Orange Strawberry and any of the Brandywine types. I think the flavor of the sauce just gets better the more varieties you have in it though.
Also, if you have freezer space, freezing the sauce is much easier. Just fill a quart bag, zip it up and place it in the freezer. No nutrients are killed off in that process either.
