For those of you using the peat pellets do you like to take the mesh off
When potting up?or is it fine to leave it on?

I rip the bottom open a little and never had a problem.

I remove the mesh entirely when I pot up.

Usually the organic material holds together well enough to transfer to a larger container.

However I don't see any harm in leaving the mesh on but as Rick A. mentioned, just open the bottom of the pellet prior to transfer.
