I have two seedlings right now:

#1) Small cotyledon leaves, two true leaves already. Took 10 days to germinate.

#2) Large cotyledon leaves, true leaf just starting to come out. Took 4 days to germinate.

So my question is, should I keep the one that is more established, or wait for the one with the big leaves?

...i'd say that if they were the EXACT SAME seed stock,
i would go with the one that has the larger leaves already IF they are still in peat pots, but if they are already in the ground (directly planted/sprouted) then i would go with the one that has been there longer. i had the exact same scenario with a 940 Vincent (845 B. X 1180 D.);
the one i first planted-out i felt was going really slowly
so i sprouted another one and that one grew really well
under the flourescents, surpassing the one in the ground.
i swapped the two, and the one now in the ground is doing well, but the one that was unplugged and kept as a backup?
easily doing as well as the ones 'out there'. (but, by now, a week or so ahead of the swap-in)
so, it could be a toss-up as always.
if they are DIFFERENT seed stocks to begin with, leave the one that is in the ground in the ground and is further along, and the other, plant wherever you can.
additionally, perhaps the one that took four days to germ is a more vigorous seed or seedling, BUT you could plant 10 seed stocks and each one from a different cross might take longer to germ as well as seed age and storage
technique...oh, my goodness....hope you make out ok.

Thanks for the advice. Both seeds are from the same seed stock, and are still in peat pots under fluorescent light.

I only have room for one plant, so that's why I have to make a decision.

My first seedling that I planted got eaten by something just 3 days after transplanting in May, so I'm already far behind.

plant one at each end of your patch. when they meet in the middle make your decision.
