My seedlings have bolted. Will they still produce pumpkins or should I plant again?
Any advice would be appreciated.

Do you mean they got leggy? They will be OK. Give them more light, and when you plant them make sure you anchor your plant down to prevent wind damage. Bolted is what happens when a root vegetable goes to seed

PS - perhaps elongate the planting hole/lay the plant into somewhat of a trench lined with the same material you started it in and leave a couple inches of the stem below the seed leaves exposed, as though the plant just tipped over---eg
