Cucumbers are always ready when you are. They can be picked at any size. I pick most of mine when they are about 3-4 inches long or so, and pickle them as spears or whole. I leave some on the vine until they get to slicing size, then pickle some as "hamburger dills" and use some fresh. The variety plays a role on how good the cuke will be at what size. Yours look like slicers, and yes, they can be picked now. The larger they get the more bitter they will be, especially if they begin to yellow. Also, that is not an albino cuke, it just hasn't seen the sun.
