What are the uses of amaranth / decoration or food. I read it was in the same family with pigweed and lord knows I got plenty of that already.

Armaranth leaves are eaten from the plant when it is young in some cultures, then when the seed heeds are formed it is made into a meal or flour. Having seen the size of these seeds it must take atleast 1/2 billion to make a pound.

I was looking in my Rareseeds catologs and seen some really colorful types of Amaranth. I was also wondering the purpose of this plant. Im gonna plant a spot for some next year.
