I grew Bonsai for years. It isn't a plant. It is a detailed growing style that results in a aged looking plant of desirable aesthetics. Japanese & Chinese styles differ widely.
Anyway, almost any plant can be trained into Bonsai with some skill & patience.
Do you want an indoor (tropical) plant or an outdoor (hardy) specimen? If hardy, would you prefer a deciduous tree or an evergreen (conifer)?

Indoor; lots of ficus work well, a few tea's, chinese elm, and a few others make for easy indoor growing. I dont have any seeds as grow mine from other methods, ebay is a good place to find seeds for cheap.
