How do you harvest and store Horse Radish ?

Not an expert by any means but was raised on this stuff!! The horse radish plant is a tough, and hardy plant. After the plant is 3 years old, (don't know why 3 but,that's what we went by) you would dig up a portion of the root, leave the plant to keep growing. As you want more you just went out dug up and cut off another piece of the root. plant's could last for years, depending on how much you harvested. I think we had 5 or 6 plants going. We stored it only in winter, cause the ground was frozen, we would dig up 3 or 4 root segments in the fall for the winter. stoted it with the potato's

I raise it, Not sure about the 3 year comment. I started last year and have harvested both years. Root stores in cool moist environment for awhile. Personally, I grate it, wait 90 seconds, add salt and vinegar to stop the heat from growing and bottle it.
Great with all kinds of meat, when you taste fresh yoou wont go back.
