What do I need too know about when and how to start these seeds. Will these onions be edible.

Start them now...the are normally started in the late fall.

your kinda late to start from seed now.....most start em at latest jan 1st......they germ very slow......i would wait for next growing season now

It's not too late if you are looking for something in the 5 lb. range, and they are very edible. My wife thought they were the best onions she ever had.

Onions take 2 years to seed

It depends what you want to achieve. Ailsae seeds are equal to the AG seeds you buy at the local store. Even if they make it to 5 lbs, it will be the same as a 500 lb pumpkin beside the WR. But a 5lb onion is still a very big and impressive onion for many!
Onion growers start in October or at the latest in November.
Check out the "IanP" and "giantveg" diaries over the past few years. A lot of info in there.

put them in, i used to get 6lb onions sown at this time of year,
grown outside without protection, treated as normal onions,
and yes they are fine to eat if you dont (nuke) them with chems,,

They are delicious only they get too big for our bloomin onion machine. Definitely not too late to start. Biggest problem is it gets too hot here before they are done growing.
