Since I'm a new grower and didn't realize how big of roots came out under there I hadn't been watering near it on my biggest pumpkin, will watering the roots coming out of the nodes near the pumpkin help it gain a lot of weight?

Every root helps, and asssuming that the main root system provides the main support, and maybe 40%...that´s just a guess...of fruit growth comes from the secondary root system, you can divide the 40% of daily weight gains by the number of leaf nodes of your plant and have a rough idea of what the individual contribution of the few leaf node tap roots near the pumpkin might be.

Please bear in mind that the main roots, in a prepped patch of that size, will also reach even further out than where your pumpkin is sitting. Watering the entire plant area will water the tap roots AND the main root system as well, even 15 ft from the plant spot.

Just look at how the leaves are shaped. They act like funnels that catch rain and direct it down the stem of the leaf so it runs right on the roots. Those roots are very important, so make sure they get fertilizer and water.
