I’m going to be working with some high school ag students and would like to set them up with their own giant pumpkin starts. One person said they will send me some, and I am grateful. But I’ve no idea how many they are sending.

It's nice for one person to think or know that someone is exclusively growing seeds from that one person that offered them. It rarely happens, I'll bet, but IMHO, you should nicely ask of or mention to him or her how many you need.
