Anyone know what the ideal pH is for brewing tea? Is it neutral 7.0, or is more acid better i.e. 6.0. The last batch of tea I made, I added water acidifier prior to brewing. I had a substantial increase in bio-film! I am assuming this is a good thing.....my thoughts are more bio-film...more bacteria.

That is an interesting question John. As an avid brewer myself, I never pondered whether the ph of my brew had an adverse affect. My gut tells me that the end factor would depend on whether you are aiming for a bacterial tea VS a fungal dominant tea.

The microbes should buffer the tea unless your pH is way off. I don't even check mine when I brew. Of course depending on whether it's more acidic or basic, it could effect if you have more bacteria or fungi.

The water I normally use in my tea has a pH of around 8.0 and is very hard.
