Ok, our club didn’t include beets in the weigh off last year and I had some dandies. Long story short, I placed said beets in the basement fridge and forgot about them. About a month ago I planted them and what a crop of new growth. Will they go to seed before it gets too cold? Keeping in mind that I’m still growing peppers in the green house because it’s so warm for this time of year.

You'll probably want to keep them in cool temps about 30-50 degrees until spring. I dont think they will tolerate a hard freeze. Also keep in mind they do the male/ female thing so maybe you can get better pollination if they're all close to each other and bloom at the same time.
