First year grower in southern Michigan starting seeds. How long approximately can you keep a plant in a pot or grow bag before it becomes root bound? Say for a 2 gallon grow bag?

15-20days.When the 4th true leaf is 3 inches across. Youll have roots wrapped around the inside of the pot/bag that will help hold the soil together.It wont be "root bound" yet.

Yeah, and then have to double the container size every extra week you want to add on. Like 1 gallon = 1 week of growth post germination, 2 gallons = 2 weeks, 4 gallons = 3 weeks 8 gallons = 4 weeks of growth post germination (?) etc. The only exception is very weak seedlings-- they do lag behind the most vigorous ones.
