Murphy's Law

Cut open one of my pumpkins to obtain the seeds and took notice of a seed that geminated within the pumpkin cavity. It had about 4 inch roots and the seed was opening up with pale white leaves starting to push their way out. The plant & pumpkin were healthy and the pumpkin was just cut from the vine today and no problems with rot on the inside. Anyone else ever have this?

This is normal. It doesn't happen every year, but the longer the pumpkin is off the vine, I believe the risk of seeds germinating inside increases. It is compounded by warmer climates no doubt.

Pretty common, I cut one open a few years back and found a 200 pounder 33DAP that was growing inside. We carved it and put it in the porch.
