Do you guy just leave your corn roots uncovered or do you cover them with dirt?

We have Peruvian purple corn, not exactly giant, but big and the roots look the same as those in your picture. I read somewhere that a foot of dirt could be piled up as the corn develops taller. I haven't tried it yet, so can't say anything more definite... was actually thinking about posting the same question. I'd Like to hear from someone who has done it too.

You can cover up till 4-6 ft depending on the type of corn.
