Hi Joel Corn is unique because the pollinator CAN affect the quality of what you harvest this year. If both varieties are tasseling at the same time they will cross pollinate. Supersweet varieties of corn really get messed up when they cross with other types. The kernels that get crossed are tough and starchy. Ambrosia is NOT a supersweet, I don't think the taste will be severely affected if some crossing does occurs. Chances are they will not be tasseling at the same time, Ambrosia comes early and Tall corn comes late.
