I have started my seeds indoors and the seeds came came up in a few days. There still in pea pots but im seeing little roots at the bottom. I live in southern arizona by next week the highs will be in the mid 70's. Should I transfer the seedlings into 1 gallon pots or into the ground to get this season started? I am experermenting different times of the year to grow cause the heat kills the vine. What should I do?

If your temps outside are good, get them in the ground ASAP.
